How to Clean a Commercial Deep Fryer

Step One: Shut Off Power to Allow the Oil Temperature to Recalibrate.

Starting the cleaning process starts with one essential yet straightforward action: disconnecting your gas or electric deep fryer‘s power source. This can be accomplished either by closing off gas supply inlets or unplugging it from its power source; either will allow cooling of oil within the fryer to ensure temperature drops to below 150F safely and quickly.

Step Two: Drain Oil and Scrape Interior Surfaces. 

Once the oil has sufficiently cooled down, transfer it into an appropriate container for recycling or safe disposal. Remove deep basket baskets or holders from your fryer as well as use a cleaning rod/scraper to rid itself of any accumulated residue within. Take special note to brush, wipe, and rinse away all debris thoroughly from corners, walls, and base areas of your fryer to ensure all debris has been successfully eliminated from its interior environment.

Step Three: Spray Water and cleaning solution

Step Five: Drain, Rinse, and Cool Thoroughly.

Once your required boil time has elapsed, switch off and allow the water to fully cool before draining the cleaning solution using a brush to scrub all sides and heating elements of the fryer. Rinse thoroughly with hot water to rid of any leftover residues or chemicals used during the cleaning process and allow basin, baskets, and utensils time for air drying before refilling with new oil for future use.
